Homemade hidden veggie sauce

A tasty tomato based sauce with added veggies. Perfect for getting some sneaky veggies into the kiddies meals. You’re one of the lucky ones if your children will eat a variety of vegetables. My 16 month old is quite good but my 3 year old on the other hand while she’s brilliant with fruit is not a fan of veggies 😦

The best way I find to include them in her diet without her realising is with smoothies and this sauce. Its super easy and quick to prepare, can be kept in a jar in the fridge for up to 3 days or frozen in a freezer bag for future use. This sauce is ideal as a sauce for pasta, as a bolognaise sauce or as a pizza base sauce. Mince meat with hidden veggie sauce and wholewheat spaghetti is a big hit in our house… ❤

Here’s what you’ll need:

  • 1 carrot
  • 1 onion
  • 1/2 courgette
  • 1 red pepper
  • 1 carton of passata
  • 300 ml stock (Beef or vegetable)
  • 1 tsp oregano
  • 1/2 tsp thyme
  • 1 tsp basil
  • coconut oil

Here’s what to do:

Heat up pan with some coconut oil

Chop up carrot, onion, courgette and pepper and add to the pan

Saute over a medium heat until vegetables are soft

Add thyme, oregano and basil to the pan and combine

Saute gently for 1 minute

Remove veg from the pan and put into a blender

Add passata and vegetable stock into the blender and blend until smooth

This recipe will fill approx 3 jam jars.

A much healthier alternative to shop bought sauces. You know exactly whats gone into it, its sugar free and its super tasty if not tastier!!
