Avocado baked eggs

Avocado’s are another superfood… I know… I know… superfood seems to be a buzz word at the moment but honestly who doesn’t love avocados. They are delicious added to a salad, included in a smoothie or mashed on some healthy bread https://aimeesappetite.com/2016/01/18/22/ and topped with a poached egg… one of my fav lunches…. totally delicious!!

Avocados contain mono unsaturated fats… what the heck are they?? Well they are healthy fats that are beneficial to your health and when eaten in moderation can help lower bad cholesterol which in turn can lower your risk of heart disease. They also are a source of fibre keeping us fuller for longer… who doesn’t want that!

Something that a few of my friends have tried before but found a bit tricky are avocado baked eggs. With that in mind I’ve put together a fool proof recipe!!

Here’s what you’ll need:

Serves 1

  • 2 eggs
  • 1 avocado
  • paprika
  • Sea salt

 

Here’s what to do:

Pre heat oven to 180 deg c

Separate egg yolk and egg whites into two bowls

Cut the avocados length ways and remove the stone

Scoop some avocado out of each half using a teaspoon creating a hollow

Add each egg yolk to each hollow

Carefully spoon the egg white around the egg yolk being careful not to let it over flow

This is the mistake most people make. They crack the egg  straight into the hollows, it spills outside of the avocado creating a mess… who wants that…(1st world problems lol)

Sprinkle with some paprika

Position avocado halves right beside each other on a baking dish/tray (they will prop each other up)

Bake at 180 deg c for approx 15 minutes or until egg is to your liking

Add some sea salt if desired
