Banana & Berry Bread (Gluten & Dairy free)

Moist banana bread bursting with juicy berries. Super delicious & healthy. Free from both gluten & dairy.

Banana bread is an old favourite of mine but my original recipe included sugar, white flour and butter.

In this recipe I have replaced them ingredients with healthier alternatives in the form of maple syrup, ground almonds and coconut oil. A cup of berries thrown in makes the bread even more tasty. I used a combination of blueberries and strawberries but the choice is yours… one or the other or both. Chocolate chips could also be added in if that tickles your fancy. Some dark chocolate chunks would also be delicious and would still keep in line with this guilt free bread!!

All you need are the ingredients, one mixing bowl and a spoon… No mixer required!!

Here’s what you’ll need:

2 Medium to large banana’s- Mashed

2 large free range eggs- beaten

1/4 cup coconut oil (60 ml) – Melted

2 tbsp maple syrup

200g ground almond flour- I used a full bag of Tesco’s own brand.

1 tsp baking powder

1 cup of berries- I used a mixture of blueberries & strawberries

Here’s what to do:

Pre heat oven to 160 deg c (fan oven) 180 deg c (non fan oven)

Grease a loaf tin with some coconut oil and line with parchment paper

Add mashed banana to a large mixing bowl

Add in beaten eggs, maple syrup, coconut oil and stir until combined

Next add in the ground almonds and baking powder and fold into the mixture (leaving a few for topping)

Finally, fold in the berries

Press the mixture into prepared loaf tin and scatter some berries over the top

Oven bake for approx 1 hour (When skewer inserted into the middle comes out clean and top is golden brown… it’s done!!!

Leave in the tin for a further 10 minutes

Carefully remove from the tin, take off parchment paper and allow to fully cool on a wire rack

Enjoy a slice with a dollop of greek yoghurt or simple on its own. No need for butter this bread is moistly delicious on its own…

Storage

No need to refrigerate, store in an airtight container in a cool place for up to 3 days
