Carrot, ginger & coriander soup

Another delicious soup to add to my collection. My carrot, ginger & coriander soup.

You can’t beat a warm bowl of soup… nutritious and filling and full of flavour.

Soup is relatively quick and simple to make. My 3 year old tucked into a bowl of this yesterday… she licked the bowl when she was finished, because it was so tasty. How satisfying is that. She ordinary wouldn’t look at a carrot on its own!!

Perfect with a wrap or healthy samba for lunch. On its own during the day to keep the hunger pangs at bay or as a starter if your having people over for dinner. Soup is always a crowd pleaser. You just can’t go wrong.

Here’s what you’ll need:

  • 3 cups of carrot (Approx 5 medium carrots)

  • 1 large onion
  • 1 & 1/2 litres vegetable stock
  • 1 tsp ginger
  • 2 tsp coriander

  • 1 tbsp olive oil

 

Here’s what to do:

Add chopped carrots and onion to a large sauce pan over a medium heat and saute for 2 minutes

Add ginger & coriander and stir well, continue to saute for a further 2 minutes until fragrant.

Dissolve a vegetable stock cube in 1 & 1/2 litres of boiling water and add to the sauce pan

Stir and bring to the boil

Reduce heat and simmer until vegetables are soft

Add to a blender and blitz until smooth
