It’s delicious in homemade soup, as a potato topping substitute in cottage pie or to be included in stir fries. Its also an ideal first food for babies.
So here’s my butternut squash, pepper and coconut soup recipe…
Delicious creamy soup with a kick…

Here’s what you’ll need:
1 butternut squash
1 litre of vegetable stock (I used 1 kallo stock cube)
1 tin of full fat coconut milk
1 red pepper
1 yellow pepper
1 tsp coriander
1 tsp ginger
1 tsp thyme
Pinch of crushed chilli or to taste. Depends if you want a kick or not 🔥
Here’s what to do:
Peel & remove seeds from butternut squash & cut up into cubes
Chop peppers and add to a large saucepan with the butternut squash
Add all other ingredients: Chicken stock, coconut milk & spices
Bring to the boil, turn down heat & simmer until veg are soft
Add to blender and blend until smooth
