A delicious carb free meal. The same version as my cottage pie but with a different topping!!
Here’s what you’ll need:
- 1 large butternut squash
- 500g mince beef or turkey
- 1 tin chopped tomatoes
- 1 beef stock cube
- 300g frozen veg- I used mixed vegetables-carrots, broccoli, cauliflower & peas
- 1 onion, chopped
- 1 tsp crushed garlic
- Coconut oil or olive oil
- Black pepper
- 2 tsp oregano
- Pinch sea salt
Here’s what to do:
- Pre-heat oven to 190 deg c
- Peel/remove the skin from the butternut squash, remove seeds and cut into cubes
- Add butternut squash to a baking tray with a little olive oil and roast ay 180 deg c for approx 30 minutes or until cooked.
- In a frying pan, cook the onion in some coconut oil- approx 5 minutes on a medium heat
- Add crushed garlic and cook for 1 minute
- In a small saucepan boil the mixed frozen vegetables until cooked
- Add beef to the pan and cook for 5 minutes
- Add tin of tomatoes, mixed vegetables,oregano & sea salt
- Crumble a beef stock cube into the mince mixture and simmer for 20 minutes
- Add mixture into a baking/pie/casserole dish
- When butternut squash is cooked, remove from the oven and mash
- Top the mince pie mixture with the mashed butternut squash
- Return back to the oven for a further 10 minutes
- Remove and serve
