Mince pie with butternut squash

A delicious carb free meal. The same version as my cottage pie but with a different topping!!

Here’s what you’ll need:

  • 1 large butternut squash
  • 500g mince beef or turkey
  • 1 tin chopped tomatoes
  • 1 beef stock cube
  • 300g frozen veg- I used mixed vegetables-carrots, broccoli, cauliflower & peas
  • 1 onion, chopped
  • 1 tsp crushed garlic
  • Coconut oil or olive oil
  • Black pepper
  • 2 tsp oregano
  • Pinch sea salt

Here’s what to do:

  • Pre-heat oven to 190 deg c
  • Peel/remove the skin from the butternut squash, remove seeds and cut into cubes
  • Add butternut squash to a baking tray with a little olive oil and roast ay 180 deg c for approx 30 minutes or until cooked.
  • In a frying pan, cook the onion in some coconut oil- approx 5 minutes on a medium heat
  • Add crushed garlic and cook for 1 minute
  • In a small saucepan boil the mixed frozen vegetables until cooked
  • Add beef to the pan and cook for 5 minutes
  • Add tin of tomatoes, mixed vegetables,oregano & sea salt
  • Crumble a beef stock cube into the mince mixture and simmer for 20 minutes
  • Add mixture into a baking/pie/casserole dish

  • When butternut squash is cooked, remove from the oven and mash
  • Top the mince pie mixture with the mashed butternut squash

  • Return back to the oven for a further 10 minutes
  • Remove and serve
