Chicken chow mein

A very popular Chinese dish that is combined with noodles and vegetables. A guaranteed crowd pleaser. This recipe uses chicken but you can substitute with beef or pork!

Health conscious as always without compromising on taste!! Makes a really delicious meal!!

Here’s my take on it… ❤

Serves 2

Here’s what you’ll need:

  • 2 chicken fillets
  • egg noodles
  • 1 onion (chopped)
  • 1 red pepper (chopped)
  • 1 carrot (grated)
  • Handful of mangetout
  • 5 tbsp soy sauce or coconut amino (soy free)
  • 1 tbsp toasted sesame oil
  • 1 tsp sweet chilli
  • 1 tsp oyster sauce
  • 1 tsp white wine vinegar

 

Here’s what to do:

  • In a pan with some oil, stir fry the chicken until cooked and set aside
  • Stir fry the chopped pepper & onion and grated carrot
  • In a separate saucepan cook the noodles as per packet instructions
  • In a small saucepan add all sauce ingredients: (soy sauce, sesame oil, sweet chilli, oyster, white wine vinegar) stir and heat gently until combined
  • When noodles are cooked turn the pan down to a low heat
  • Add chicken and stir fry veg to the saucepan with the noodles and pour in the sauce and mix well
  • Simmer for 2-3 minutes
