Avocado and blueberry super smoothie bowl

Super smoothie bowls are all the rage right now as they are packed with healthy superfoods and are a really delicious alternative to cereals.  They are creamy and thick enough to eat with a spoon and don’t take long to whip up. All you need for this one is, some frozen blueberries, 1/2 avocado, yoghurt, honey to taste and a blender of course!!

Blueberries are very rich in antioxidants. They contain vitamin C, E  and A. They help boost your immune system and can improve digestion as they are high in fibre.

Avocados are incredibly nutritious. They contain heart-healthy mono unsaturated fats, can help lower cholesterol, are super good for your skin and are an excellent source of fibre and potassium. Not forgetting to mention that they add a lovely creamy consistency to smoothies!!!

Heres’s what you’ll need:

  • 1/2 Avocado
  • 150 g frozen blueberries
  • 4 tbsp greek yoghurt
  • Honey or sweet freedom fruit syrup to taste

I’m a big fan of this fruit syrup. It’s made by sweet freedom and can be used for baking, added to porridge or used in tea and contains only 13 calories per teaspoon. It’s a perfect addition to your cupboard if your on a calorie controlled diet.

Here’s what to do:

Simply add all of the ingredients to a blender and blitz until smooth

I used frozen blueberries but if you don’t have any readily available you could add a few ice cubes along with them. The smoothie tastes best cold.

Add smoothie to a bowl and top with:

  • Some extra berries
  • Milled chia seeds
  • Golden linseed crunch

These are both from Aldi

Both are an excellent source of fibre, protein and omega 3.

  • A tbsp cooked oats… I added some just to make the bowl a little more hearty but not essential.

If you don’t have time for the smoothie bowl and just want to enjoy an Avocado and blueberry super smoothie… simply add the Avocado, blueberries, yoghurt, honey and 200ml of your chosen milk and blitz in a blender.

Enjoy,

Aimee ❤
