Overnight oats where have you been all my life!!! I’m probably a “little” late joining the craze but what the hell. I’m a fan of regular oats and would have them quite regularly for brekkie during the week but this recipe has really brought oats to life for me. I have to admit having my breakfast from a jar was kinda fun too.
A delicious breakfast or snack option. Only takes a few minutes to prepare. Ideal to grab and go in the morning. Can be made with cows milk, soya, rice or almond… or whatever your preference is. I opted for almond milk. I’m not allergic to dairy but alway feel better without it or with very little in my diet.
Here’s the recipe…
Ingredients:
30 g porridge oats
1 tbsp desiccated coconut
100 ml milk
2 tbsp greek yoghurt or coconut cream
Strawberries (chopped)
Homemade granola
Method:
Put 30g oats in a jar (or bowl)
Add milk, desiccated coconut & stir
For the next layer, add chopped strawberries
Next layer, add greek yoghurt or coconut cream
Leave in the fridge overnight
Next morning, remove from the fridge and top with some homemade granola (My homemade granola recipe can be found in a previous blog 🙂 ) or with some chopped nuts
Can be heated up if desired… before you add the granola. I personally prefer them cold!
