Perfect during this cold weather. Butternut squash, onion & courgette work wonderfully together. These 3 vegetables along with some spices and vegetable stock is a meal packed with flavour. Here’s what you’ll need:
-1 butternut squash
-800 ml Vegetable stock
-1/2 tsp each of thyme, black pepper, cumin, paprika
Here’s how to make the soup:
-Peel butternut squash, (remove seeds) cut into cubes
-Chop the onion & courgette
– Add all to a large saucepan with 800ml veg stock & spices & simmer for 20 minutes
– Blend in food processor or nutri bullet until smooth.
