Strawberry chia jam

A guilt free jam that is ideal for afternoon tea. Lovely served with a slice of healthy brown bread or wholemeal scone. Chia seeds are an excellent source of nutrition. They are fibre, iron and calcium rich. Taken daily they can help increase energy levels. Why would you not include these little gems in your diet!! They are so easy to incorporate into your food. Can be sprinkled over cereal, included in casseroles and salads or in jams.

Ingredients:
200g chopped strawberries, juice of half lemon, 1 tbsp honey, 2 tbsp chia seeds

Method:
Add strawberries to a saucepan & simmer over a medium heat until softened. (This takes around 5 minutes)

Add lemon juice & honey & mash with a fork or potato masher.

Add chia seeds & allow to thicken for 5 minutes.
Transfer to jar or container.
Store in the fridge when cooled.
Should last up to one week in the fridge. 👌🏻
